Man are those green huevos rancheros good. The chile verde they put on top is excellent with big cubes of tender pork. The guy i went with is a total Mid-Westerner and had a sandwich. I prefer the ranchero sauce over the green sauce but both are great. I was a creature of habit and ordered it every time I went there for several years before going there for dinner and trying some of their other mexican food. It's all excellent. I'm so glad you tried this. The green huevos...Yes! I'm so glad you tried this. The green huevos rancheros are the best breakfast in town, in my opinion. And you were right on going with the half beans/half potatoes. However, I must say I've been disappointed by the non-mexican items on the breakfast menu. It's hard to believe at a place titled Mollies Country Kitchen, but I'd stick to the "south of the border" items. I get the green huevos almost every time now. But one other thing I can recommend is the breakfast burrito with chorizo covered in ranchero sauce.
