Happy Hour
I should mention that they have also just instituted a new happy hour from 2 - 6pm Mondays through Fridays featuring ½ price margaritas and $1 fish tacos.UPDATE: Went for a second meetup today (March 8th), this time at Taco Rosa's Tustin Marketplace location in Irvine, where I met up with "brekkiefan," frequent Chowhound and Yelp contributor Russ (aka "Russkar"), frequent guest reviewer on this blog Shelly Borrell, Sarah from Slashfood and the Delicious Life blog, and her friend Andrew, where we were able to take more time to sample the monthly specials and other dishes on the menu. Here now is a better rundown of Taco Rosa's specials for the month of March:

Wow, you're fast - I just got home! Just wanted to say that I really LOVED the tomato soup. Nice roasted flavor, and the corn in it was perfect. I liked the ceviche trio a lot too; not sure which one I liked best, they were all good. They were pretty sweet though -- sweet contrasted with pickle flavor. So someone like Carter who doesn't like food so sweet might not like it much. I wasn't so crazy about the chips. The guacamole and three salsas were all great, but the chips themselves were spiced funny and tasted a little burnt. Stlll, they made for a reasonable salsa & guac transportation device... right to my mouth, mmm.

Ditto on what Joy said...I thought it was just me: The tortilla chips did taste a little burnt.

Yeah, I usually just stick with the free appetizer they bring you when you arrive. We should've mentioned the burnt-tasting chips when we were there. They seemed perfectly open to any constructive criticism we had to offer and didn't take any offense when we told them CP's fish was overcooked.
Well, they didn't offer me a refund either. That was some freakin' pricey halibut. =b
Maybe I can ask them about that. I feel bad bringing somebody to a restaurant only to have them have a bad experience. Anyways, they have switched to the sea bass now.
Looks like someone got the creme brulee at the second meetup too, because that one looks a lot more browned on top than the one you had at our lunch. It was funny how so many of the wait staff came to watch it being done, too -- almost as entertaining for them as for us? Ooo, live fire scorching food: definitely cool.
So next time we'll have to go somewhere new. Hm, so many options...
