The takeout window at Tortilla Jo's at Downtown Disney has recently undergone a complete remodel and menu overhaul. It is much more authentic than it used to be (although it wasn't entirely inauthentic before), in fact surprisingly more authentic than I ever imagined something on Disney's premises could be. They've got carnitas tacos:

Yes, they changed everything there. The cheese on the nachos tasted like Velveeta but I'm not much of a nachos person anyway. Let us know if you go.

Ew. Velveeta? Maybe I won't go back. I long for the original menu.....

Well, from what I remember (I could be wrong about it as I got those nachos quite a while ago). If it's the nachos you were hoping to get then maybe don't go back. But don't keep yourself from going for tacos, burritos, aguas frescas, etc., because of the cheese they put on their nachos. I was just trying to be balanced by pointing that out as the one inauthentic element amongst a tidal wave of other very authentic elements.

I'm hoping to get some of their original, more authentic items, like sopes with chorizo, cilantro and cotija cheese.
